This is a scrumptious treat that I must admit it is far outside of my usual healthy recipes. Sometimes we just need a treat! This recipe came from a friend and I thought it was just so shareable and unique that I wanted to pass it along so you can enjoy it too!

This is an easy, sharable sweet bread recipe that is perfect for holiday gatherings, Christmas morning breakfast, birthday party cake alternative, or just an after-dinner family treat!

Have some ripe bananas lying around? Put them to good use and have hot banana bread cooling on the stove in just over an hour!

Should bananas be ripe for banana bread?

Bananas get sweeter as they ripen. If you prefer a sweeter dessert banana bread, you should use very ripe bananas!

Did you know you can ripen bananas quickly in the oven?! Just place parchment paper on a baking tray and lay bananas (peels ON) in a row. Bake at 300 degrees until they are soft and the peels are black (usually about 20 minutes or so). Flip about halfway through baking. Allow to cool then scoop out the insides for a soft, sweet banana!

Can I make banana bread with 2 bananas?

Yes! If you only have 2 bananas, 1/2 cup applesauce can be used as a substitute for the third banana. You can grab a free copy of the “Healthy Swap Outs” for baking printable list here. It’s convenient for finding alternatives when you are out of an ingredient (and shows healthier options to swap out as well!). Hang it on the fridge or on the inside of your spice cabinet door for easy reference.

What are the ingredients for homemade banana bread?

1/2 cup Shortening

1 1/2 cups Sugar

2 cups Flour

1/2 teaspoon Baking Soda

2 Eggs

3 – 4 Ripe Bananas

How to make homemade banana bread:

  1. Preheat oven to 300 degrees.
  2. Cream shortening and sugar.
  3. In a separate bowl, mix flour and baking soda.
  4. Beat the eggs, add to sugar mixture and blend.
  5. Mash the bananas with a fork, add to sugar mixture and blend.
  6. Add the flour and baking soda to the mixture and blend.
  7. Spray loaf pans with nonstick spray and pour in batter. (Find smaller bundt pans here)
  8. Bake at 300 degrees for 40 to 60 minutes or until a toothpick comes out clean.
  9. Allow to cool and remove from pan
  10. Add icing if desired (I usually just heat up a can of icing for about 15 seconds and pour over the bread- easy!)

Recipe notes:

  1. If nuts are desired in the bread, 1 to 1/2 cups of pecans or walnuts can be mixed with 1 tablespoon of flour (to prevent clumping) and added to the flour mixture in step 2 if nuts are desired in the bread.
  2. 1 to 1/2 cups of chocolate chips can be added to the flour mixture in step 2 if desired.
  3. If you only have 2 bananas, 1/2 cup applesauce can be used as a substitute for the third banana.
