Grilled Beer Marinated Chicken | Picture the Recipe (2024)

I know it’s been a while since I posted a recipe and I have no good excuses really. I’ve just been enjoying the weather and time with my family busy doing other stuff, that I haven’t taken any pictures for recipes. But, I do promise to make it up to you guys in the next couple weeks. I have a bunch of summer recipes lined up that are perfect for grilling season and large family gatherings (especially for a 4th of July party) like this one right here…

I love me some grilled chicken and this recipe is a perfect example of how you can get creative while grilling/barecuing instead of making the plain ol’ burgers and hot dogs (not that they aren’t good).

Chicken drumsticks are the perfect BBQ food to serve at a gathering. Simply marinate them the night before, and cook them on the grill. They’re a no-fuss finger food that will have your family/guests licking their fingers. The possibilities for marinades and flavors for chicken on the grill are endless.

This beer marinated chicken with spices and lime in the marinade keeps the chicken drumsticks so juicy and tender all through the grilling that it’s hard to mess them up. They are not very spicy and have a barely there hint of beer flavor that makes it down to the bone. They are absolutely delicious! Here’s the super easy recipe-

Prep Time

Cook Time

35 min

Ingredients

  1. 8-10 chicken drumsticks
  2. 1/4 cup olive oil
  3. 1 tsp onion salt
  4. 1 tsp paprika
  5. 1/2 tsp ground cumin
  6. 1/4 tsp cayenne
  7. 1/2 tsp ground black pepper
  8. 3-4 cloves of garlic
  9. Juice of half a lime
  10. 1 cup beer
  11. handful of chopped fresh parsley
  12. Salt to taste

Instructions

  1. – Rinse and pat dry your chicken drumsticks and toss them into a zip lock bag.
  2. – Mix together all the remaining ingredients together to make a marinade. Starting with the olive oil, onion salt (or you can use finely diced fresh onion), paprika (I used sweet hungarian paprika), ground cumin, 1/4 of a teaspoon of cayenne powder (or more if you like a little more heat like I do, its fairly mild with just 1/4 tsp) and ground black pepper.
  3. – Then grate the fresh garlic cloves and squeeze in the juice of half a lime.
  4. – Pour in the beer.
  5. – Give the marinade mixture a good stir to mix it all together and taste it. Then add some salt according to your taste but don’t be skimpy. (You want the marinade to be a bit salty, cos you’re adding it to a lot of chicken and you’re taking the chicken out of the marinade before you grill it.)
  6. – Lastly toss in a handful of chopped fresh parsley and mix it in.
  7. – Pour the marinade into the zip lock bag with the chicken. Seal it and massage the marinade into all the pieces of chicken. Let the chicken marinate for atleast a couple of hours in the fridge, overnight would be best to let the chicken absorb all the flavors. (I tend to flip the bag over every couple hours to make sure the both sides of the chicken get to sit in the juices to marinate more evenly.)
  8. – Once the chicken has marinated simply throw them on the grill (make sure to oil the grill so the chicken doesn’t stick) for 25-30 minutes turning over the pieces & basting it with the marinade every 7-8 minutes until the internal temperature is above 170F. Another way to check if the legs are done if you don’t have a meat thermometer, is to pierce a leg with a sharp knife down to the bone and if the juices run clear, it’s done…if it’s pink/ red then you’ll need to cook the chicken more.
  9. – Serve them up hot and garnished with some presh parsely and a squeeze of lime. Don’t forget to serve some chilled beer with these finger licking good chicken drumsticks!

i live in an apartment in the second floor so no grilling is allowed up here, i would have to grill in front of my neighbors yard in the first floor, which is an inconvinient for me, is there anyway i can do these in the oven?

Hi Brici, you can definitely cook these in the oven. Just pop them in a baking dish at 400F-425F for about 35-40 minutes turning it over halfway through the cooking process. You can finish it off under the broiler on hi for few minutes to get that grilled flavor too if you want.

I’d be careful of oil splatter cos it’s a watery marinade, but I don’t see why not. 🙂

I have a cast iron grill that you place on top of stove for indoor grilling. You can probably get one at most stores for about $20-$30.

I love cilantro and with the flavors of chilli and lime it would definitely be a great substitute.

This looks wonderful. My concern is using the marinade to baste the chicken during cooking. Did you make up fresh marinade?

I suppose you could, although I don’t think you’d get the grilled flavor as they’d more steam.

Hi Myra! I personally think the chicken goes great with these salad sides- or Apple ‘n Cabbage Slaw With A Light Cider or Vinaigrette. Any of the usual BBQ sides too should go well with this. 🙂

I had a very hard and not sucessful time making this recipe, maybe someone can help. I did the recipe as directed but used legs and thighs. Did the overnight marinade. I used a gas grill, preheated it and turned the heat to medium. That’s where the problems started. Each and every piece as I laid them on greased grill, started to burn and smoke right away. I would say they were on the grill for a minute and fire, fire, fire! I couldn’t get the chicken off fast enough with out burning my fingers and hair. What went wrong. I’m thinking the oil and heat flair up? Help?

FAQs

What is the best beer to use for beer can chicken? ›

The most popular choice is lager — something middle of the road, and not too hoppy or bitter. I have a deep abiding love affair with fruit-forward sours, so that's what I reach for when grilling beer can chicken, both because I like to drink it and because the acidity works well with the grilled chicken.

How do you keep marinated chicken moist on the grill? ›

The key steps to really juicy grilled chicken are kitchen essentials — lessons that even the most seasoned griller should revisit each year. Pound the chicken thin for more even cooking, brine or marinade for flavor and color, and grill over direct heat for grill marks, but finish over low heat to keep them juicy.

Should you marinate chicken before or after grilling? ›

A marinade infuses the chicken with flavor prior to cooking and makes sure it stays extra juicy and tender (never dry).

How to cook marinated chicken on the grill without burning it? ›

Here's the easy way - use a zone system on your grill. With a gas grill, only turn on the burners on one side of the grill and leave the other side off. With a charcoal grill, push all the coals to one side and leave the other side empty. Put the chicken on the no-heat side of the grill and close it.

What kind of beer is good for marinating? ›

You can use any local wheat beer or Hefewizen style beer. I find this style of beer works very well in this marinade. One of the best things about using a beer in a marinade is that it pretty much guarantees that you will end up with a food that pairs well with the beer that you used.

What can I use instead of beer for chicken marinade? ›

Substituting the beer would be simple, I could half fill a mason jar with chicken stock or choose a lemon based soda to achieve the same moist result.

Should I rinse marinade off chicken before grilling? ›

Remove Marinade Before Cooking: To prevent flare-ups on the grill and ensure properly browned meat when sautéing or stir-frying, wipe off most of the excess marinade before cooking. Keep just a little marinade on the meat surface to maximize flavor.

Can you leave chicken in marinade too long? ›

Most recipes for marinating meat and poultry recommend six hours up to 24 hours. It is safe to keep the food in the marinade longer, but after two days it is possible that the marinade can start to break down the fibers of the meat, causing it to become mushy.

What is the secret to grilling chicken? ›

Cook your chicken breast on the grill for 6-8 minutes on one side. Flip your chicken. After 6-8 minutes open your grill lid and flip your chicken breast with tongs. A great tip is to only flip your chicken breast once so that it stays nice and juicy (and creates delicious grill marks!)

Should you poke holes in chicken to marinate? ›

While poking holes in your chicken while marinating it can be helpful, it's not mandatory. Mostly, this method helps if you don't have several hours to spare when marinating your poultry. Poking holes in your chicken can allow the marinade to penetrate better in a shorter period.

Should chicken be cold or room temp before grilling? ›

Remove the chicken from the refrigerator and let it hang out at room temperature while the grill heats. If the chicken is too cold when it hits the hot grill, the meat will tighten and end up tough and may stay cold and raw near the bone even after the rest of it is beautifully cooked.

How many minutes should I marinate chicken? ›

You can marinate chicken anywhere from 2 hours up to 24 hours, though marinating chicken for even 15 to 30 minutes can impart flavor and moisture into smaller pieces of meat. Generally, bone-in cuts of chicken, such as wings, drumsticks and breasts, will require a longer marinade time than their boneless counterparts.

Why does my marinated chicken burn? ›

When making a marinade, limit the amount of sugar you mix in. This isn't limited to just the crystallized kind -- ingredients like honey, syrup, molasses, or vinegar with added sugars can also cause food to burn.

How long do I grill chicken on a gas grill? ›

While all grills are different, most of the time you'll be golden if you grill your chicken breasts for about 9-10 minutes, flipping the chicken breasts over at the halfway point so you get beautiful, even sear marks on each side of the chicken.

How do you cook chicken on the grill without drying it out? ›

How do you grill chicken breast without drying it out? Brining is the secret to juicy grilled chicken breasts. It requires a bit of extra time, but the soak in the a brine helps to tenderize the meat, which makes it less tough once it's grilled. Also, a brine is a great way to add flavor if you want.

What kind of beer do you use to make fried chicken? ›

The best beer to pair with fried chicken would probably be a pale ale or German-Style hefeweizen. They go well with fried foods in general and won't overpower the chicken but have enough flavor to complement it. I'll go with a classic Sierra Nevada Pale Ale.

Is IPA beer good for beer can chicken? ›

Craft beer can chicken is one of the simplest recipes I know and it packs a lot of flavor, especially if you are using a floral IPA. This isn't your typical dry, bland chicken breast! The flavor of the beer enhances the spice rub, leaving you with a tender, moist bird with perfectly crisp skin.

What beer to tenderize meat? ›

However, not all beers are created equal, Light beer does not add a lot of flavor to the meat. Heavy, dark beers add a little too much, often bitter. The best sort of beer to soak your meat in would be an amber or nut brown ale, not too light and tasteless but not too dark and bitter.
